Gu\u00e9rard fue pionero en esta tendencia, y su influencia se extendi\u00f3 r\u00e1pidamente, marcando el comienzo de una nueva era en la alta cocina.<\/p>\n\n\n\n<p>A partir de ese momento se alej\u00f3 de la <em>nouvelle cuisine<\/em>, las salsas pesadas y las preparaciones complejas de la cocina cl\u00e1sica francesa.
